Inspired By: Pineapple Dole Whip

On a warm beautiful day in Disneyland, what is that one favorite treat you enjoy most? If you answered Dole Whip then we are in total agreement. 

As we walk down Main Street USA and turn left towards Adventureland, it is almost impossible not to stop at the grassy rooftop hut where this delicious treat is served and has been served since the mid-’80s where it immediately surpassed the original pineapple juice and spears in popularity.  We can’t think of a more iconic or sweeter pairing than soothing melodies, singing birds, cooled air, and that delicious pineapple taste.

For both of us, it was an easy decision as to what our very first Inspired By Recipe would be. We each have treasured memories that go back to our very own childhoods. Memories of enjoying the cool crisp whip with our own grandparents and parents while singing along with the Enchanted Tiki Room birds, flowers, and carvings. Those happy childhood memories sparked a determination to keep those traditions going within our own families and we can both proudly say we have done so by doing the same with our kids and their grandparents, making it now a three-generation experience.

On this journey to recreate this iconic treat we turned to Chris, Cristina’s husband, for his expert tastebuds and knowledge. It was a must to get this nostalgic (and gluten-free) treat just right. Ach tu lieber – we did just that! We are proud of this version of Dole whip due to its taste being spot on along with a unique and delicious twist from a secret twist or two,  complimentary of Chris! We love it, our families love it, and we hope you do too.

And now ladies and gentlemen, come with us, to a world of joyous songs and wondrous miracles, Walt Disney’s Enchanted Tiki Room.  Turn on your Enchanted Tiki Room music, sit back, relax, as you listen to the birds sing and enjoy our Delicious “Inspired by” Dole Whip!  Aloha!

When ready to cook, set the temperature to 275℉ and preheat the grill lid closed for 15 minutes.  We used our Traeger Grill, with the Signature Pellets, so that the pineapple would have a sweet smokey flavor.  Smoke whole Pineapple on Traeger Grill for one hour. Let cool, then cut out the core, cut it up and keep separate. Cut up the rest of the pineapple into small pieces.

Next, you will make your simple syrup.  To make your simple syrup you will use 1 1/2 cups cold water and 1 1/2 cups granulated sugar.  Place your ingredients in a medium saucepan and combine sugar and water. Bring to a boil, until the sugar has dissolved completely (do not stir the mixture).  

After you have made the simple syrup, add the pineapple core that you have cut up and turn the heat back up to medium and allow it to reduce and turn into a golden brown,  incorporating the pineapple flavor (approximately 10-12 minutes). Once this is complete, take the mixture off the fire and set aside to allow it to get to room temperature for the next step.

In a blender, add the smoked pineapple pieces and 2 cups of pineapple juice.  Blend until the mixture is pureed.

Then strain the pureed mixture through a Chinois into a separate bowl until liquid is out and discard the remaining pulp. Keep the liquid for the next step.

Next, add the blended pineapple mixture into a large stainless steel bowl, then add the rest of the 1/2 gallon of pineapple juice, 3 tsp Extra Virgin Coconut Oil, 1 tsp Tahitian Vanilla extract.  Blend well with an Immersion Blender.

Afterward, pour the simple syrup, which should be cooled into a separate bowl, separating the pineapple core pieces from the simple syrup.  We added in 3 tsp of smoked salt, but you can add it into your liking. Then whisk the smoked salt into the simple syrup.

Now take your pineapple mixture, and with your immersion blender operating in the mix, slowly add in the simple syrup.

In a small bowl add 1 cup of pineapple juice mixture and 1/2 tsp of Xanthum Gum.  Mix well with a wire whisk.

Add the Xanthum gum slurry to the large bowl with the pineapple juice mixture and blend well until incorporated with the immersion blender.

Lastly, place the pineapple mixture in the refrigerator to chill before you add it to your ice cream maker.  We tried three different ice cream machines, and it was quite an adventure in itself. The first two would only get cold enough to create a slush but not a dole whip consistency.  The one that produced the best texture and consistency was the Breville Smart Scoop Ice Cream Compressor, and it did a beautiful job!

In researching how to create our own Dole Whip, we found the Original Dole Pineapple Soft Serve Mix available on Amazon from multiple vendors.

With this mix, you just add water and it will work with an ice cream machine (preferably with a compressor). It’s a good alternative if you do not have time to create the treat from fresh ingredients.

To create a sweet and smoky flavor we used our Traeger Grill with the Signature pellets.

If you do not have a Trager you can use an oven, to create the same flavor in the pineapple.

Set your oven to 350 and then roast the pineapple for 45 minutes to an hour.

To keep a nice flavor for your ice cream, store in a glass or stainless steel containers, not plastic.

Notes

We used a Traeger Grill, with the Signature Pellets,  so that the pineapple would have a sweet smokey flavor and the Breville Smart Scoop Ice Cream Compressor, to create the light and creamy texture of the Dole Whip.
Recipe times will vary depending on Ice Cream Machine.
